Natal’s locals, known as potiguares, embody the easygoing spirit of Brazil’s northeast.   • Carne de sol com macaxeira (sun-dried beef with cassava)

  • Ginga com tapioca, fried fish served in a chewy tapioca pancake, a true Natal classic
